This hand-forged Honyaki Gyuto from Satoshi Nakagawa in Sakai is a true work of art. Crafted from Shirogami #3 steel, it features a mirror-polished hira and a beautifully defined hamon. A Honyaki Gyuto is a luxurious workhorse that maintains its sharpness exceptionally well. The octagonal handle is made from wenge wood with a buffalo horn bolster.

What is Honyaki?
Honyaki, meaning "true hardening," is a highly demanding forging technique requiring extensive time and skill. The blade is forged from a single piece of Shirogami #3 carbon steel, then oil-quenched for optimal strength and toughness. To prevent excessive hardness and brittleness, parts of the blade are coated in clay, resulting in differential hardening. This process creates the signature hamon pattern—visible waves along the upper part of the blade.
The hira (upper blade surface) is mirror-polished, while the kireha (grind) features a hairline finish. This is a luxury knife for true connoisseurs!
⚠️ Carbon steel is not stainless. Always dry the blade thoroughly after use to prevent rust formation.
